Southwestern-Pennsylvania is famous around the world for its lamb, thanks primarily to two local producers, Elysian Fields and Jamison Lamb. Many of the country's best restaurants use lamb from one of these farm, because of their dedication to high quality. Both are also dedicated to raising and slaughtering the animals as humanely as possible.
Elysian Fields is probably the more famous of the two, thanks to the devoted patronage of Thomas Keller. I think both are delicious, but I have to admit I was a little extra excited to learn that selected cuts of Elysian Fields lamb are now for sale on-line. The lamb is about as pricey as expected, but shipping was surprisingly reasonable. A $45 boneless shoulder roast was a modest $8.74 to the East End, while a $95 leg of lamb was $11.25, according to the web site's shipping calculator.
For those further afield than Pittsburgh, shipping charges may be more painful. Just for fun, I tried my parents' zip code in California -- a whopping $140 to ship that same leg of lamb. $86.86 to ship that same leg of lamb [Elysian Fields is working with UPS to get the best prices possible, and they are still making some adjustments. But Pittsburgh-area shipping prices are definitely more pleasing!).
Elysian Fields lamb is also for sale at some specialty shops in the Pittsburgh area. It can be ordered from Brilliant Market in Aspinwall (call before Monday and it will be delivered to the shop on Thursday, perfect for a Friday or Saturday dinner party).
Jamison Farm Lamb is also available on-line. There are more and different cuts available, including organ meat, sausages, lamb and barley soup, and a whole, butchered lamb option ($249, includes 2 legs, 2 racks or rib chops, 8 loin chops, 4 shanks, 2 lb. ground lamb, 3 lbs. stew meat, liver, kidney). Shipping, however, seems to be more expensive (at least locally) and is a little bit harder to calculate before placing the order. Jamison Lamb is also available locally at Giant Eagle Market District in Robinson Township.
